sushi recipes with chicken

Any good sushi recipes that dont use seaweed?

I love sushi but my dad doesnt like it. is there any way that i could make sushi that will apeeall to a 44 year old man? for example using chicken?
i love all kinds of sushi but i want to make it for my dad. i told him you cant taste it but can you usse lettuce?

My dad is the same way. He has found to have the roll made with the seaweed on the inside (not sure what this is called) helps. He goes to a place near his home now and they'll use strips of cucumber I believe in place of seaweed and loves it.
