Good recipes for japanese food?

I was assigned Japan in my cooking class, and I am supposed to cook 3-5 different Japanese dishes. Any good suggestions (besides sushi)? It doesn't necessarily have to be an easy one.

As for a recipe, one of the very easiest is one of the most elegant and delicious. It is:

Bonito Tofu

Take one block of firm tofu and cut into squares, keep the block as a block.
Top with diced scallions.
Drizzle shoyu over the tofu and let it begin to seep through to your plate.
Top the lot with bonito flakes.

That's it!! And it is really really good!
