sushi recipes california rolls
does anyone have a good recipe to make crispy california sushi or crispy bagel sushi rolls?

There are different types of crispy- or crunchy rolls, either the filling is tempura deep fried prior to assembly, or the entire roll is deep fried after assembly, or crunchy "crumbs" ( panko- breading) is added to the roll.

to make an entire crunchy roll- make the california rolls or a bagle roll by substituting salmon and cream cheese as below, and then add the following:
3 oz Panko (Japanese bread crumbs) (1 -1/4 quarts)
1 Cup Nori Komi Furikake (Japanese seasoning of seaweed and sesame seed)
2 2/3 Eggs
1 Cup Flour

Mix the panko and furikake together; spread mixture in a shallow pan. Beat eggs; reserve in a shallow dish large enough to fit a whole sushi roll. Lightly dust each sushi roll with flour; then dip in egg. Next, roll in panko mixture.
Quickly deep fry 1 sushi roll until golden brown and crisp, about 1 minute. Pat rolls with a towel to remove excess oil. Using a thin, sharp knife, trim ends of sushi, then cut into 8 or 10 slices.

To make a tempura style roll- use the california roll recipe below, but deep fry the crabstick as above- just the crab- roll in the egg, the panko mixture and deep fry prior to assembly.

To add some "crunch" to the roll, use panko as above, but just deep fry the crumbs themselves for 1/2 minute, season with furikake or just salt, and add prior to rolling the roll.
California Rolls:
Ingredients:

4 sheets dried seaweed (nori)
4 cups sushi rice (recipe below)
1 avocado
1/2 lb. imitation crab
1 tbsp mayonnaise
1/2 tsp salt
2 tsps sesame seeds

How to Cook:

Peel an avocado and cut it into strips or mash it.
Put imitation crab in a bowl and mix with salt and mayonnaise.
Cover a bamboo mat with plastic wrap.
Put a sheet of dried seaweed on top of the mat.
Spread sushi rice on top of the seaweed and press firmly.
Sprinkle sesame seeds over the sushi rice.
Turn the sushi layer over so that the seaweed is on top.
Place avocado and crab lengthwise on the seaweed.
Roll the bamboo mat forward, pressing the ingredients inside the cylinder-shaped sushi.
Press firmly the bamboo mat with hands, then remove the rolled sushi.
Cut the sushi roll into bite-sized pieces
