How do you properly press sushi rice and the fish together to make 1 piece of nigiri sushi?
I know how to make sushi rice, I know how to use a touch of vinegar and clap my hands to get rid of excess moisture. I also know to hold the rice in one hand and use my finger to spread wasabi on the fish, then press the fish together.
My question is, exactly how do you press the sushi rice and fish together to make nigiri sushi?
What eludes me are the step by step hand and finger movements on how to press sushi together. Any links to pictures and step by step hand movements would be great.
