Can an employer make you pay the restaurant shortage of bottles of beer or eat bread?

I am a waiter and our employer will begin to make us all bottles of beer missing at the end of your turn, sometimes have a feast that is all you can drink beer and wine, so how I presume in order not to lose sight that did not come in bottles? errors or servers or costume making?
